Cabbage Blue Powder Color for Creams/Icing

This powder is made from cabbage and will change tone from teal blue to dark blue to purple dependent on the acidity of what you are coloring. Products higher in acid (icings with lemon juice, etc) will become purple. To get the tone that you want, you can add a little baking soda to make it more teal blue or add a bit of lemon juice to make it more purple. For a light and more stable blue choose the spirulina instead.
There are about 6 teaspoons per .5 oz container. We estimate a half ounce container will color enough icing for one or two typical 8" double tier cakes.
Use about 1/2 tsp to replace 1 Tbsp of liquid color. Dissolve in neutral liquid ingredients like water or egg white and then add to creams or batters.
